Pineapple Coconut Popsicles

My favorite kind of ice cream is pineapple coconut and I wanted to recreate that flavor profile here. In hind sight, I would have used one less banana in this recipe and increased the amount of pineapple to 1 ½ cups. The flavor of these popsicles reminds me so much of my favorite childhood ice cream, that I can’t wait to make them again!







What You Need:




2 ripe bananas
1/3 cup plain yogurt
½ cup pineapple chunks
1/3 cup shredded coconut



What To Do:



Combine all ingredients in a blender or food processor and pulse until combined, but not smooth.






Divide the mixture in the popsicle maker. Freeze and enjoy!














Serves 4

Peanut Butter Banana Popsicles

These peanut butter banana popsicles are creamy, delicious and healthy. I’m totally wishing that my popsicle tray had more than four pops right about now! These have to be the best frozen treat I’ve come up with at home. I was planning on using just the banana and peanut butter, but my girlfriend Rachel suggested I add a little yogurt to improve the texture and boy was she right. Thanks Rach!




What You Need:



3 small ripe bananas, 2 mashed & 1 cut into small chunks
1/3 cup plain yogurt
4 Tbs natural peanut butter



What To Do:

Combine mashed banana with yogurt, stir well.








Divide yogurt mixture, banana chunks and peanut butter evenly in a popsicle maker. Using a butter knife carefully swirl ingredients. Freeze and enjoy!

Strawberry Banana Popsicles

Estella from The Weekly Bite recently did a post on making popsicles with pureed watermelon and I was inspired to make my own strawberry banana version. ( http://weeklybite.com/watermelon-popsicles/) What a great idea! This quick, easy and healthy dessert can be whipped up in less than 5 minutes. Freeze, then enjoy on a hot summer afternoon.





What You Need:

½ ripe banana
1 cup strawberries
½ cup filtered water or juice of your choice
Optional: 1 Tbs sweetener of your choice



What To Do:

Combine all ingredients in a blender and process until smooth.







Divide liquid into popsicle tray and freeze.









Yields about 1 1/3 cup - 4 pops
