Roasted Garlic Hummus

This super garlicky hummus is great on sandwiches and wraps, or as a dip for raw vegetables. I bet you knew I would say that! By roasting the garlic before adding it to this hummus, you get a sweeter flavor in the final product. If raw garlic isn’t your thing, simply omit.





What You Need:


1 – 15 oz can garbanzo beans, drained but not rinsed (reserve 2 Tbs canning liquid)
¼ cup tahini
2 heads roasted garlic, recipe follows
2 small cloves raw garlic (to taste)
Juice of half a lemon
2 Tbs juice from canned beans
1/8 tsp freshly cracked black pepper
1/8 tsp kosher salt



What To Do:

Combine all ingredients in a blender and process until smooth.

How To Roast Garlic:



What You Need:


2 heads garlic, tops removed
Extra virgin olive oil
Pinch of salt and pepper



What To Do:

Heat oven to 400*.  Place garlic on a piece of foil and drizzle with oil and season with a pinch of salt and pepper.






Seal foil around garlic and bake for 45 minutes, or until garlic flesh has softened.






Hold head of garlic at the base and squeeze out softened cloves.  Set aside.

I tried roasting garlic once... it was a disaster! I actually forgot it was in the oven and... well... you can imagine what it looked like when I finally remembered to take it out haha!

Oh no Cassie! ;P I have to admit, I really love making roasted garlic... makes the house smell SO good. The husband always loves when the house reeks of it :D Double bonus!!

Melissa, If you do make this one, I have to say its VERY garlicky... Like blow your socks off, stays with you the rest of the day garlicky ;) I used it on a turkey sandwich yesterday for Brian & it was just right, but eating it straight up is not for the faint of heart!

OH! i'm SO glad you posted this roasted garlic how-to! seriously i could eat raw roasted garlic..haha does that make sense..

but anyways i LOVE roasted garlic! i just actually love garlic in general.
