Ham 'n Potato Casserole


I know I normally do a full recipe post, complete with step by step pictures (and a final product photopgraphed in the natural sunlight and not my hideous kitchen lighting), but I created Ham 'n Potato Casserole and ended up really loving it.  This morning on Jenna's blog she featured buffalo chicken dip.  She wrote about how it was total 'man food' and ever since...  I have had it on the brain.  Man food that is.  I looked in the fridge and knew I could make something mighty tasty with some apple wood smoked ham, left over breakfast potatoes from Sunday morning and some habanero pepper jack.  I knew that this recipe would be a hit with B when he walked past the kitchen while I was cooking and said, ‘MMMM haaaaaam!’  After it baked, I added a little sliced green onion (as always) and some minced Italian parsley as a garnish.  After B piled up helping number three I figured I should ask… Would you all like to have the recipe ??

here's a story. you posted about this the other day on my blog, and i was going to email you about it because it sounded like a recipe marshall would LOVE. i forgot to email you. today, i saw the title of your post in my reader and got excited! and then i saw that there was no recipe and got sad. so, in other words, YES.. RECIPE.. PLEASE!

okay for some weird reason i've been in the most random mood for a casserole lately! but i don't like ham or potatoes (except sweet taters) wahhhhh

got any suggestions miss mary mary quite contrary hahahahahaha i'm sorry i just had to do that

Looks really good! I am not a huge fan of ham but I can easily not add it or add turkey or something else.

Yummy, yummy. Too bad I married a Jew. No ham for us. Maybe I'll just make it for me one day. I can be that greedy.

@ Melissa: you could pretty much add any protein you like in plae of the ham and I think it would would just fine....
