Mary's Mexican Pulled Chicken

This quick and easy crock pot meal comes together in less than 5 minutes, making it exactly what you need on a busy day. The smoky seasonings make this dish perfect over a salad of romaine, red onion, cucumber and a dollop of Greek yogurt. Serve with hot sauce and pickled jalapeño peppers. No need for dressing, the sauce make the ideal condiment.






What You Need:



1 lb chicken tenders
1 – 7 oz can salsa (recommended: Herdez salsa casera)
1 – 4 oz can tomato sauce
1 tsp chili powder
1 tsp cumin
Salt and pepper to taste



What To Do:

Place rinsed chicken in bottom of slow cooker.









Season the chicken with salt and pepper.








Next, season the chicken with cumin and chili powder.









Top the seasoned chicken with green chiles.








Next, top the chicken with salsa and tomato sauce.









Set slow cooker on low for 6 hours.









When slow cooker has one hour to go, shred chicken with two forks and mix well. If dry, add water or chicken broth.








Serves 4

Hi Mary! Do you know of a way to make pulled chicken/pork without a slow cooker? I don't have one (yet), but I really want to learn to make pulled meat. Any tips? This recipe looks delicious!

Hi Lara!
I just saw your comment/ question... I've only ever made pulled chicken & unfortunately not sure how you could adapt pork. Chicken is something I cook with a lot though. If you want to try and recreate this w/o a slow cooker, just brown up the chicken in oil with S&P... Add the remaining ingredients, bring to a simmer and cover and cook over lowish heat until chicken is done. I like to use the tenders so its FAST ;). Then, just shred it up and that's it!
